Hand-formed, well-seasoned patties of never-frozen beef chuck. Serious custom rolls with a springy texture somewhere between ciabatta and focaccia. Fresh-cut, twice-fried fries. Quirky toppings with a keen regional and pop-culture twist. Doesn’t sound that revolutionary these days, in this burger-besotted town, but when Hubcap’s Ricky Craig debuted his downtown hole-in-the-wall 10 years ago, it marked the beginning of a burger renaissance here. Now he superintends a small flock of outlets from Galveston to the Bay Area to the Heights, each with its own raffish atmosphere, all delivering standup burgers and fries to a grateful public. Go for an oh-so-Craigian idea like the muffuletta burger goosed with olive salad, or a standard like the chili cheeseburger, with its stirring house-brewed chili.
